Fresh and zesty, the addition of raspberries to a classic mojito gives the cocktail a pink hue and extra tangy sweetness.

Ingredients

  • Small handful raspberries
  • 4 lime wedges
  • 3 mint sprigs
  • 1 tsp sugar
  • 60ml white rum
  • Soda water to top up

Method

  1. Put most of the raspberries, 3 of the lime wedges and the sugar in a highball glass and muddle well. Put the mint sprigs in your hands and clap them together to bruise them lightly, then add to the glass. Fill the glass with ice, then pour in the rum and stir well. Top up with soda water, garnishing with the remaining whole raspberries and lime wedge.
