Turkey kofte with cranberry-tahini dip

Ingredients

  • 500g turkey mince
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 2 tsp ras el hanout
  • ½ tsp salt
  • 6 tbsp chopped mint, coriander and/or parsley

For the dipping sauce

  • 4 tbsp tahini
  • 8 tsp cranberry sauce
  • 4 tsp freshly squeezed lemon juice
  • About 40ml water

You’ll also need

  • 20 small skewers or cocktail sticks

Method

  1. Heat the oven to 180°C fan/ gas 6. Put the turkey mince in a bowl with the ground coriander, ground cumin, ras el hanout, salt and chopped mint, coriander and/or parsley. Mix well until evenly combined. Use your hands to roll the mixture into 20 small kofte, then put on a baking tray. Bake for 15 minutes.
  2. Meanwhile, make the dipping sauce. Put the tahini and cranberry sauce in a bowl, then mix well with a rubber spatula until relatively smooth (depending on how smooth your cranberry sauce is). Stir in the freshly squeezed lemon juice and around 40ml water to loosen. Taste and season with salt and pepper, then serve with the warm kofte for dipping.

  1. This recipe easily scales up for a bigger festive gathering.

  2. Roll the kofte, then freeze on a tray before transferring to a freezer bag or container. Cook from frozen for 25-30 minutes. The dip can be made up to a day in advance and kept covered in the fridge; give it a good stir before serving.
