The Ginger Pig began 20 years ago in North Yorkshire with farmer Tim Wilson, who reared cattle, sheep and pigs and had an interest in rare and native breeds. Aware that some cuts of pork were prized over others, he began making his own sausages to be more sustainable – and found himself with a star product on his hands. The Ginger Pig found a home at London’s Borough Market and today, the butchers has grown to eight shops across the capital and an online business, offering beef, lamb, pork, poultry and more from a network of UK producers with a shared commitment to sustainability, provenance and animal welfare.

Ginger Pig beef is dry-aged for a minimum of 28 days, gammon is cured in house and sausages are still made by hand using natural casings. Demand is so high for their pigs in blankets at Christmas that Tim reckons they made 35,000 last year… The prize also includes a copy of The Ginger Pig’s new Christmas cookbook, to help the lucky winners use the meat to its best advantage.
